Ingredients of Baigan Bhaja / Brinjal Tawa Fry / Fried Eggplants 🙂

  1. You need 4 of Eggplant Brinjal / Medium Sized.
  2. You need of Mustard Oil for Shallow Fry.
  3. Prepare 1 tsp of Chili powder.
  4. It’s 1 tsp of Coriander Powder.
  5. It’s 1/2 tsp of Cumin Powder.
  6. Prepare 1/2 tsp of Turmeric.
  7. It’s 1 tsp of Garam masala powder (optional).
  8. It’s to taste of Salt.

Brinjal fry can be served as a veggie side dish along with roti, chapati, paratha or naan. Brinjal /Eggplant also known as Aubergine is used here for making this delicious crisp baingan rava fry. Its same as the one which is used for making Baingan Bharta. To make this fry,brinjals are sliced, marinated with spices, coated with fine sooji /rava and then its either pan fried or shallow fried.

  1. Wash and cut the brinjals into half and then further make slits into two centimeters..
  2. Sprinkle turmeric, red chili, coriander, cumin powder and salt on both sides of the brinjal slices with li'l oil..
  3. Toss well such that spice mix gets uniformly coated to each slice.Marinate it for 5-10 min..
  4. Heat a frying pan or tawa and grease it nicely with li'l oil.Place the brinjal slices on the tawa..
  5. Cook on medium-low flame for 4-5 min or till both sides are cooked and crispy. Drizzle some more oil if required..
  6. Drain onto an absorbent paper. and serve hot..

Take brinjal slices in a bowl, add salt, turmeric powder, chilli powder and mix well. Heat mustard oil in a pan, pan fry brinjal pieces till golden brown. If you want crispy brinjal, add some rice flour to the brinjal and then fry. Take the fried eggplant slices out of the kadhai and place onto absorbent paper. Cook in batches this way, till all are done.
