Ingredients of Steamed Aubergine with Spicy Asian Dressing

  1. It’s 1 of big aubergine (1lb).
  2. You need Pinch of salt.
  3. Prepare 2 Tbsp of soy sauce.
  4. Prepare 1 Tbsp of +1tsp vinegar.
  5. Prepare 2 tsp of sesame oil.
  6. You need 1/4 cup of scallions, thinly sliced.
  7. Prepare 2 tsp of ginger, grated.
  8. It’s 1/4 tsp of garlic, grated.

After tinkering around in the kitchen I have come up with a recipe for steamed aubergine with an Asian dressing (the perfect accompaniment to salmon or cod) but to use steamed aubergine in a different way, simply follow the instructions below up until you add the dressing and go on to use in whatever dish you heart desires – I think it would be a great addition to a rich tomato pasta sauce. Mix in the soy sauce, rice vinegar, sugar and chilli oil. Heat the canola and sesame oil in a wok or saucepan over medium high heat and add the fresh ginger and sesame seeds. Carefully remove plate from steamer and allow eggplant to cool slightly.

  1. Wash, hull and cut your aubergine into bite size pieces..

Garnish with scallions, cilantro, and/or toasted sesame seeds. Now make the sauce by combining the Chinese black vinegar, light soy sauce, oyster sauce, sugar, sesame oil, and chili sauce. Remove the eggplant from the steamer (no need to pour out the liquid in the dish).
