Recipe: Appetizing Miso Eggplant

Miso Eggplant. Miso-glazed eggplant (Nasu dengaku) is on many Japanese menus, and it's a dish I always order. It's incredibly easy to make at home. I roast the eggplant first, then brush it with the glaze and run.

Mix miso, soy sauce and sugar in a small bowl. Smear top of eggplant slices with miso sauce. Nasu Dengaku is a classic Japanese side dish made with eggplant sliced in half, scored and brushed with a sweet and savory miso glaze. You can have Miso Eggplant using 4 ingredients and 4 steps. Here is how you cook that.

Ingredients of Miso Eggplant

  1. It’s 1 of big eggplant.
  2. You need 1 tsp of miso.
  3. Prepare of Vinegar.
  4. You need of Sesame oil.

The translation literally means eggplant grilled over a fire, which is exactly how it's done in Japan. Other than as an appetizer, you can also serve it over steamed rice as a main vegetarian dish and it's a perfect quick weeknight meal. (Nutrition information is calculated using an ingredient database and should be considered an estimate.) Nasu-miso is pan-fried eggplant dressed with a savory-sweet miso glaze. A grilled version of this dish is known as Nasu dengaku where the eggplant is grilled with a miso glaze. The miso glaze is applied liberally to the eggplant after the roasting process is finished.

Miso Eggplant instructions

  1. Wash eggplant and cut diagonally. Brush each side with sesame oil..
  2. Pre heat oven at 250°C and bake it for 10 mins each side..
  3. After that remove from oven and brush it with miso mixture each side then put it back again in the oven for 5 mins each side again..
  4. When done sprinkle with sesame seed and spring onion..

Close up shot of the delicious miso glazed eggplant after the sesame seeds and green onion are added. Sprinkle with salt and leave ½ hour. Rinse, pat dry then brush with a little veg oil on both sides. Either BBQ, grill or panfry eggplant until soft. Spread one side with miso mix, and sprinkle with sesame seeds.
