Recipe: Delicious Greek style rice pudding

Greek style rice pudding. Bring water and rice to a boil in a saucepan. Rice pudding was always my favorite treat. In Greece we make it using milk, sugar, short grain (white) rice, some cornstarch to thicken it, lemon peel & vanilla for flavoring, and ground cinnamon on top.

Greek rice pudding is a thick and creamy treat—it takes quite a bit of stirring action to thicken properly, but the end result is really worth the effort. It gets its name, rizogalo, from its two main ingredients—rice (rizi) and milk (gala). I love a great Greek rice pudding recipe. You can have Greek style rice pudding using 7 ingredients and 6 steps. Here is how you cook that.

Ingredients of Greek style rice pudding

  1. Prepare 1.5 cups of Italian style rice.
  2. Prepare 1-2 cups of water.
  3. Prepare 1.5 litres of milk.
  4. Prepare 1 1/4 cups of granulated sugar or to your liking.
  5. It’s 1 tsp of vanilla extract.
  6. Prepare 2 of cinnamon sticks.
  7. Prepare of Ground cinnamon for topping.

Homecooked, rich, and filled with creamy textures that always have you begging for a second scoop. This recipe hits all the marks. Place milk, sugar and lemon peel (just the peel – none of the pith) in a heavy saucepan. Bring mixture to a boil, stirring constantly until sugar melts.

Greek style rice pudding step by step

  1. Firs wash the rice vigorously in a strainer.
  2. Now add the water in a pot and add water till it covers the rice about one inch above and boil at low heat till the water is almost evaporated from the pot.
  3. In another bigger pot add the milk and bring it to a boil at medium low heat.
  4. Now that the water is starting to boil add the rice,cinnamon sticks,vanilla and sugar make sure the rice goes in with the left over water it will help so the milk will not rise.
  5. Cook at low closer to medium heat stirring constantly so the rice doesn’t stick for close to 45 min you will notice the starch will start making the pudding thicker.
  6. Now it’s ready poor it in small bowls and enjoy.

Reduce heat to low and add the rice. In a pot, add the rice, water, milk and heavy cream. If you don't have cardamom, you can add a vanilla pod and its seeds directly to the pot. During simmering time, you may notice the rice getting too sticky/thick. Add ½ cup of milk at a time to regain pudding texture.
