Aviyal (Mixed vegetables curry) Recipe. Aviyal recipe is a healthy mix of vegetables cooked to perfection with some mild spices. To prepare this easy vegetable recipe, take a grinding jar and add red pepper powder, coconut and green chillies. Grind together till it becomes a smooth paste, add more water if it's too thick.

A soothing vegetable curry from all the way from Kerala. Made with Southern flavours of raw bananas, drumsticks, ash gourd, yam and coconut. Add salt to this once the vegetables are cooked. Ingredients of Aviyal (Mixed vegetables curry) Recipe

  1. It’s of Yellow pumpkin.
  2. You need of potatoes.
  3. It’s of beans.
  4. It’s of carrot.
  5. Prepare of drumstick.
  6. It’s of mango (optional).
  7. It’s of green peas.
  8. It’s bottle of gourd / Lauki.
  9. You need of double beans.
  10. You need of grated coconut.
  11. It’s 1 tbsp of jeera.
  12. Prepare 1 of big onion.
  13. It’s 2 of green chilli.
  14. Prepare 1/2 tsp of mustard seeds.
  15. Prepare 1/2 tsp of urad dal.
  16. You need leaves of curry.
  17. You need 2 tbsps of curd.

Grind together the coconut, cumin, green chillies and yogurt to a fine paste. Add this paste to the cooked vegetables. Garnish/season with the coconut oil and curry leaves. You can use other vegetables like the small eggplant, other squashes or melons etc.

Aviyal (Mixed vegetables curry) Recipe step by step

  1. Take fresh vegetables of you choice,like yellow pumpkin, potato, beans, carrot,drumstick,mango (optional),green peas,double beans etc..
  2. Clean,wash and cut the vegetables into 1 inch pieces.Pressure cook them for 1 whistle and keep them aside..
  3. Coarsely grind grated coconut,onions 1 big,green chillies, cumin seeds (jeera)..
  4. Keep the cooked vegetables on the stove and add in the coarsely grounded ingredients.Add salt to tatse,cook till the raw smell goes off. Add little curd to itand mix well..
  5. Temper some mustard seeds,urad dal and curry leaves in 1/2 tsp oil and add to the curry..
  6. Serve hot with rice and papad.
