  1. Prepare 5-6 of Peeled pumpkin pieces – (small size).
  2. Prepare 1-2 of Potato pieces – (small size) but this is optional.
  3. You need – 1-2 tablespoon of Chopped coriander leaves.
  4. Prepare as needed of Cooking oil (preferred olive oil).
  5. You need 1/2 tablespoon of Mustard seeds.
  6. Prepare 1/2 cup of Chhole Or Chhola boiled -.
  7. Prepare 1-2 pieces of Green chilli -.
  8. You need 1-2 pieces of Red chilli -.
  9. It’s 1-2 pieces of Garlic -.
  10. You need 1-2 pieces of Onions -.
  11. Prepare 1-2 leaves of bay leaves.
  12. It’s 1-2 tablespoon of garam masala.
  13. Prepare 1/2 tablespoon of Fennel seeds -.
  14. You need 1/2 tablespoon of Kalonji -.
  15. It’s 1 tablespoon of turmeric.
  16. Prepare to taste of Sugar.
  17. Prepare to taste of Salt.

The best part is that the Kumror Chhokka is also very easy to make, so you can choose to make it on any. Kumror Chakka is a popular one amongst the Bengali vegetarian dishes. Chunks of Pumpkin and Potatoes tempered with Panch Phoron and cooked in Ghee Kumror Chakka is bliss and goes amazingly with Luchi. In a bowl prepare a thick paste of ginger paste, cumin powder, turmeric powder, red chilli powder and hing with a little bit of water.

Bengali recipe Kumror Chhokka (Pumpkin Masala Curry) step by step

  1. Heat the oil in a pan and add little bit of mustard seeds and kalonji and fennel seeds to there and stir it's just few seconds..
  2. Add washed peeled and chopped pumpkin and chopped potato pieces (potato optional) and fry them incorporating the things in the heated cooking pan for few seconds..
  3. After preparing the pumpkin and potato incorporated items just keep them aside in an another bowl..
  4. Let's start to prepare your another cooking items masala curry by taking green chilli, red chilli, garlic, onions, and adding garam masala to there and make a better paste of the things..
  5. Heat the pan again and by pouring a little bit of cooking oil and pour the paste items by adding the bay leaves to stir it well for few seconds again..
  6. Add boiled chhole and pre – prepared pumpkin and potato pieces to the masala gravy and stir the whole thing by adding few amount of water and sugar, salt and turmeric to the taste to there and at least few seconds by covering it well..
  7. Just after few minutes open the lid of the pan and look at your Pumpkin masala curry or Kumror Chhokka is ready..
  8. Decorate the delicious item by garnishing to there chopped coriander leaves. Feel the smells and take the taste. Yummy.

Heat mustard oil in a korai until it starts smoking and turns pale yellow. One by one, stir in the cumin powder, coriander powder, turmeric powder, ginger paste and salt. Mix well and sauté over medium heat for less than a minute. Toss in the pumpkin, potatoes, boiled. At my home, a 'Kumro' (Pumpkin) always swings between a 'Chenchki' and this 'Chokka'.
