Easiest Way to Prepare Delicious Fried Brinjal

Fried Brinjal. Vangyache kaap or Brinjal phodi is the Maharashtrian and Konkani version of sliced fried brinjal rounds. These crispy brinjal rounds are similar to the way Begun bhaja is made in the Bengali cuisine. Each home has its own variation of making brinjal phodi or baingan fry or vankaya fry.

Brinjal recipe or brinjal fry is also known as 'Brinjal phodi' or 'Vangyache kaap' in the Marathi language. It is a crunchy and tasty shallow fried brinjal slices. Brinjal fry goes very well as an accompaniment with either dal-rice or masala khichdi. You can have Fried Brinjal using 7 ingredients and 18 steps. Here is how you achieve that.

Ingredients of Fried Brinjal

  1. You need 1 kg of brinjal.
  2. Prepare 2 of medium sized tomato.
  3. Prepare 1 1/2 tea spoon of salt.
  4. You need 1 tea spoon of red chilli powder.
  5. Prepare 1/2 tea spoon of dry coriander.
  6. It’s 3/4 cup of oil.
  7. It’s of Coriander leaves for garnishing.

Brinjal fry can be served as a veggie side dish along with roti, chapati, paratha or naan. Season the brinjal slices with salt and fry them in small batches over low medium heat until crispy and golden in color. Drain and transfer the fried eggplant to paper towels to drain any excess oil. set aside. How to make the yogurt dressing.

Fried Brinjal step by step

  1. Take brinjals.
  2. Take off their leaves and Wash them nicely.
  3. Cut in pieces as you like (not too large).
  4. Take tometoes (only two) Wash them.
  5. Cut in small pieces.
  6. Now start cooking. Take a karahi and put brinjals in it.
  7. Add oil.
  8. Keep stirring and cook it on medium flame for 5 minutes..
  9. Now add salt,red chilli and dry coriander..
  10. Mix all ingredients.
  11. Now cover the lid and cook on low flame.
  12. After 2-3 minutes add tometoes.
  13. Mix them..
  14. Now let them cook on low flame.keep stirring continuesly after 2 mints passed.Few minutes later they will change their colour and shape.
  15. Now tometoes are almost cooked and brinjals are also looking tender but not completely done..Give them 5 more minutes.
  16. Check your brinjals if they are ready and completely cooked, turn off the flame. (How to check :if your vegetable in tender and not hard it means it is properly cooked.. 🙂 hope all new chefs can understand now :p.
  17. Sprinkle coriander leaves..
  18. Dish out and serve with germa garam chapati, raita,salad.
